Projects - Cooking - Chicken and Broccoli Casserole

This is a mix of cheese, broccoli and chicken. Makes a good lunch and dinner, and doesn’t take too long to make. Some things can be done in parallel if you’re good.

350* in lightly greased 11×9 pan for 30-40 minutes

  • Layer the chicken mix, the broccoli, and the sauce in the pan
    • Chicken mix: Melt the butter and saute the chicken on medium heat for a few minutes until chicken are just cooked. Then set aside.
      • 1/4 cup butter
      • 4 cubed chicken breasts
    • Broccoli: boil for a couple minutes, drain, and set aside.
      • 1 package thawed broccoli, or 1 1/2 head fresh broccoli, chopped to pieces same size as chicken.
    • Sauce mix:
      • whick until thick and bubbly, then remove from heat
        • melt 1/4 cup butter
        • add 1/4 cup flour
        • gradually add 2 cups milk
      • stir in:
        • 1/2 cups swiss cheese (mozzerella is a decent replacement)
        • 1/2 cups cheddar cheese
        • 1 tsp lemon juice
        • 1/4 tsp salt
